If our kids could eat cold cereal for breakfast every day they totally would!! Unfortunately for them, their mothers aren’t on board with that idea. 🙂 Of course there are days when cold cereal or toast/granola bar on the go are necessary! (more than I’d like to admit). And of course there are healthy options like scrambled eggs and protein pancakes. But sometimes you just need to change things up with some fresh ideas! Here are some of our favorite breakfast options that are healthy and doable with a little prep work and planning:
These are so yummy and so easy to make!
12 eggs (or egg whites)
Veggies of choice (good options are spinach, green peppers, onions, tomatoes)
Seasoning salt (I like Johnny’s Seasoning) or salt and pepper
Meat slices (can be deli meat, ham, sausage, bacon…whatever you like!)
Whole Wheat English Muffins (if you want to make a breakfast sandwich)
Preheat oven to 350 degrees F
Add 1 egg per muffin spot or equivalent egg whites and stir
Add desired veggies (this amount may vary)
Add desired meats
Sprinkle with seasonings/salt and pepper
Place in oven for 15 min (cooking times may vary slightly)
Remove pan from oven and sprinkle shredded cheese over top of eggs while warm and let melt.
Remove egg from pan and place in a whole wheat english muffin for a yummy breakfast sandwich, or eat as an egg patty.
You will likely have left over egg patties. Use these to make breakfast sandwiches/burritos (or whatever really) for future days and freeze. When ready to use, defrost for ~2 min, and cook on hi for ~1 min (microwave times will vary). Your kids will LOVE these!! And they can warm them up all by themselves big BONUS to save some extra time before school. 🙂
Karli’s Favorite Yogurt and Granola (Quick and Easy)
Here’s another quick fix idea that is yummy! My daughter Halle loves this for breakfast!! Dannon Oikos Triple Zero yogurt is the best out there! (low sugar, high protein and fiber). There are plenty of flavors to choose from, but our favorites are salted caramel, vanilla, chocolate and banana:
After you choose a yogurt flavor, add granola into the little yogurt cup. I often add just a little bit of water to make the mixing easier. Kind brand granola is a healthy choice, I like the Vanilla Blueberry Clusters with Flax Seeds. It’s low in sugar and calories (for granola) and it’s yummy!
Angie’s Peanut Butter Banana Overnight Oats
I love this recipe because you make it before you go to bed, and then just grab and go in the morning.
1 ripe banana, mashed
1 cup milk (whatever kind you prefer, regular, almond, etc.)
1/4 cup peanut butter (you could also use PB2)
1 Tablespoon chia seeds (optional but gives you added nutrients)
1 Tablespoon flaxseed (again optional, but more nutrients)
1/2 teaspoon vanilla
1/2 teaspoon cinnamon
Mix all ingredients together and then add 1 cup old fashioned oats (not quick oats). Seal in an airtight container and refrigerate overnight for 6 hours or more. In the morning just grab and go! Or if you prefer it warm, you can heat it in the microwave.
Angie’s Overnight Steel Cut Oats in the Crock Pot
Before you go to bed, place 4 cups of steel cut oats and 1 cup of water in a crock pot on the “keep warm” setting. Allow to cook overnight. In the morning scoop a serving size into a bowl, and stir in your favorite toppings and mix-ins. The possibilities are endless: milk, almond milk, honey, agave, brown sugar, cinnamon, coconut flakes, fresh fruit, nuts, peanut butter, PB2, etc. Leftovers can be stored in the refrigerator and reheated.
There are lots of other recipes out there where you cook the toppings in the crock pot with the oats (like apples and cinnamon), but I prefer to keep it simple and then add to it. Just personal preference! And then my kids can each choose which toppings they want. P.S. I buy my steel cut oats in the bulk section at Winco.
