This cucumber dip is amazing!! It’s so refreshing and it’s my husband’s FAVORITE dip. This has definitely been a “love at first bite” relationship for us! The first time we ever tried this dip we were living in AZ and my husband’s aunt made it for a family gathering. Were were hooked! I know if I EVER need to get on Jud’s good side, I just whip up a batch of this goodness…works every time!! (Don’t tell him my secrets!)
There are two ingredients: 1 Cucumber and a box of cream cheese. (So easy!) You can also use the reduced fat version to save some calories and fat (which is what I do often), but either works great. The reduced fat version doesn’t compromise the flavor, so why not? I also add seasonings like salt, garlic salt, and pepper.
This dip is also good to add to a sandwich, wrap, pita, anything! My husband finds uses for it everywhere, I swear! Whip this up real quick and bring it to a BBQ this week to try it out. The directions are so simple, here you go:
1 cucumber (you can remove with peel or leave it on, your choice. I recommend removing the peel for your first time)
1 Box of Cream Cheese
First, peel the cucumber. Using a grater, grate 1 cucumber into bowl. Remove excess water by tipping bowl on its side and holding the shredded cucumber in the bowl over a sink. Let the water run out, but let the shredded pieces stay moist. You don’t want ALL the water gone.
Soften the cream cheese in the microwave for 1 minute. Remove from microwave and place grated cucumber on top. Mash together with a spatula(these look awesome)/potato masher until smooth. It’s ok if there’s some small chunks of cream cheese. Make it as smooth or as chunky as you want! Add salt, pepper, garlic salt to taste. Let it chill in the fridge for about 1 hour. Ruffles make a great combo with the dip! Get ready for a refreshing party in your tummy. 🙂
